Region Notes

Les Grèves is situated in the North between Les Toussaints, Les Bressandes and Les Theurons. In French,Grèves means sandy, small stones, which describes the soil of these vineyards. It is the largest Beaune Premier Cru vineyard.

Cellaring potential

5 to 10 years, depending on the vintage.

Vinification

Grapes are harvested by hand and put in small cases in order not to damage the fruits. Grapes are pressed softly, they ferment in oak barrels produced by our cooperage. 1/3 are new barrels.

Maturation

Aging usually lasts 15 months on fine lees before bottling

Geographical Situation

The commune of Saint-Aubin lies at the western fringe of the Côte de Beaune, overlooking the villages of Auxey-Duresses, Meursault, Puligny-Montrachet, Chassagne-Montrachet, and Santenay.

Characteristics

The vineyards of Saint-Aubin consist of two zones of approximately equal size, laid out at roughly right angles to one another:

• One area lies on chalky limestone soils with a southern to southeastern exposure.

• The other area has gravel and clay soils, with a cooler, easterly exposure.

Vinification and Maturation

• Grapes are harvested by hand and placed in small cases to avoid damaging the fruit.

• They are then gently pressed, and fermentation occurs in oak barrels made by the estate’s own cooperage.

• One-third of the barrels are new.

• The wine is aged for approximately 15 months on fine lees before bottling.
