A cooler, more overcast summer slowed ripening, preserving delicate aromatics.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"title-m0F\"\u003evinification\u003c\/p\u003e\n\u003cp\u003e\u003cspan class=\"description-ZJc\"\u003e90% of the fruit was hand-harvested, carefully bunch sorted and destemmed into a combination of fermentation vessels, including stainless steel tanks and French oak cuvees. A mix of indigenous and selected yeasts guided fermentation.
