We are incredibly lucky to have a vineyard that can produce a profile of Shiraz such as this. Facing east and growing in a valley alongside the Wild Duck Creek adjacent to the winery, the Original Vineyard has proved over three decades to be a truly remarkable place. It is protected from harsh winds during the growing season by its surrounding geography. The soils naturally hold what little moisture falls upon them so the vines are able to bask underneath clear Heathcote sunshine in blissful happiness.

The grapes are then picked at full and balanced ripeness, with up to 50% of whole bunches retained in each small ferment. Once dry, the wine is then gently pressed into 100% new Dominique Laurent barrels, with each small parcel from the vineyard kept separate. The parcels are determined usually by the variation in soil throughout the vineyard, with certain areas being picked before others depending on ripeness. The very best barrel is then selected and bottled on its own. The fruit comes from our oldest pinot noir blocks, planted in 1988. It is handpicked, destemmed, and fermented in our 3,500 Litre French oak foudres. It is then aged in a combination of new and old barrels. The final stage is an extensive tasting of all the wines by Lindsay and Jamie to choose which barrels will go into the blend.

Technical Notes

Picking Date: 29th March 2022

Winemaker: Lindsay McCall & Jamie McCall

Alc level: 13.5%

Brix at Harvest: 23-23.5o

Total Acidity: 6.1 g/L

Wine pH: 3.5

//cdn.shopify.com/s/files/1/0591/7674/7071/files/ParingaEstate-LJM-BottleShot-Web-02-416x416_1.png?v=1750935282
2024-paringa-estate-the-paringa-chardonnay-750ml
2024 Paringa Estate "The Paringa" Chardonnay 750mL

97 Pts Tyson Stelzer Wine Business Monthly (v22)

2023 has produced a wine of immense power and impeccable balance. It is a great inclusion, along with the subtle lacing of orange peel, white pepper, blood orange, cinnamon and blueberry. It's eminently classy, refined and electric, in its way. The wine speaks eloquently of its place in the Victorian hills, but it also expounds fragrance, finesse and energy. It's a super wine. You can drink this now, but it borders on frisky. I love it as is, but the wine will only gain in stature, complexity and nuance as it ages. Five years from release might be a good rule of thumb, but you go your own way. I will never forget the way the tannins performed in the mouth that day: they gave new meaning to pliability, ductility, support and flow and told me that natural grape tannin is the highest, purest form of structure that there is. We know now that the 2015 season yielded brilliant wines of clarity and classicism in this part of the world, and so, with that preamble, I taste the 2015 Quintet here today, after seven years in bottle. On the nose, there is raspberry seed, bramble, cocoa, cassis, tobacco, bay leaf, a hint of tapenade, cardamom pod and brine. In the mouth, the wine plays out with all of these characteristics. It is supple and pliable and balanced, perhaps its most wonderful feature is the balance. It's a ripping wine, a superstar. If you're the owner of some 2015 Quintets, good for you.
