There was very little rain to interfere with ripening and this also allowed us to make all picking decisions based purely on fruit profile. From the river we see a gradual increase in clay content across the rows which corresponds with a decrease in vigour over the block. For this reason we harvest the block in several batches aiming to achieve the perfect balance in each batch. We harvested the 2018 Command Shiraz over three weeks from 7 - 22 March, bringing a little fruit in earlier with a tight acid line and the last fruit to come in with a deeper, more plush palate weight to balance. We used a combination of heading boards and standard open fermentation combined with a small amount of barrel fermentation to create the Command blend. Post pressing our Command batches were transferred to a combination of new French and American oak from coopers we know and trust. I will never forget the way the tannins performed in the mouth that day: they gave new meaning to pliability, ductility, support and flow and told me that natural grape tannin is the highest, purest form of structure that there is. We know now that the 2015 season yielded brilliant wines of clarity and classicism in this part of the world, and so, with that preamble, I taste the 2015 Quintet here today, after seven years in bottle. On the nose, there is raspberry seed, bramble, cocoa, cassis, tobacco, bay leaf, a hint of tapenade, cardamom pod and brine. In the mouth, the wine plays out with all of these characteristics. Interestingly, the wine is matured in new barrel, but not just any, indeed, in those produced by Burgundy superstar Dominique Laurent – some readers would have heard of these ‘magic casks’, barrels produced uniquely for, and in some respects by, Laurent. He selects his own trees, takes the best bits of those trees, matures the wood for four and a half years, and they are decidedly thicker than most barrels. These barrels are not sold widely, but do get bought by, Domaine de la Romanee Conti, Clos Mogador, Beau Freres in Oregon and Pingus… and Powell \u0026amp; Son.\u003c\/p\u003e\n\u003cp\u003eSlips into the glass like midnight quicksilver. Polyphonic groans. The deep, dark colour says one thing, the perfume backs it up with its strong wave of dark, ripe forest berries, espresso scents, sweet earthiness, strong lathed wood notes, mocha, liquorice and char. Sound the fog horn. The palate is thick, sumptuous, layered and intense. A dark night of near molasses-textured dark fruits, woody spice, dried fruits and nuts with flickers of salt bush and anise. Paints the palate in thick ribbons of flavour, suede tannins chime in through its length, the finish is bold, strong, gummy.
