As fortune had it, an unrelated call prior to vintage to our now good mate Joel Mattschoss saw us doing some odd jobs around his amazing Wilton Hill property in a “work for fruit” type payment scenario.\u003c\/p\u003e\n\u003cp\u003eAs harvest was almost upon us,  the good fortune continued with a call from a mate to say “I’m at a vineyard down the road from you, the owner is out of picking bins, and the pickers have gone home. Do you like Pinot?” The following day we descend on some wonderful organically grown Pinot Noir, and after a bit of massaging throughout the year Eden Valley stalwart Mark Barthlemeus let us pick a little of his gnarly old 1919 Shiraz.\u003c\/p\u003e\n\u003cp\u003eAlong with our now allocated plot from Adrian Hoffmann, our 2021 Dero consists of the following…\u003c\/p\u003e\n\u003cul\u003e\n\u003cli\u003eA Barrique of 2020 Dero – After blending our 2020 wine we returned a blended Barrique to the cellar. This stood the test of time beautifully and is included in the 21 Blend.\u003c\/li\u003e\n\u003cli\u003eEbenezer – Adrian Hoffmann – Mickan Block DV Shiraz.\u003c\/li\u003e\n\u003cli\u003eEden Valley – Joel Mattschoss – Wilton Hill Old Vine \u0026amp; Block 14 Shiraz.\u003c\/li\u003e\n\u003cli\u003eEden Valley – Mark Barthlemeus – Old Vine 1919 Shiraz.\u003c\/li\u003e\n\u003cli\u003eEden Valley – Tony Walker – Marden Springs Pinot Noir.\u003c\/li\u003e\n\u003c\/ul\u003e\n\u003cp\u003eThe above fruit was all handpicked in 400 to 1500kg parcels ranging from 11.5-15 beaume. The largest parcel was broken down into three separate ferments with most going through long slow whole clusters fermentations – with a small parcel open fermented.\u003c\/p\u003e\n\u003cp\u003eThe wine was then filled to French Oak Barriques to rest in our cool cellar for around 16 months and blended towards the end of winter 2022, shortly after 2685 bottles were filled unfined and unfiltered with only a small so2 addition prior to bottling.\u003c\/p\u003e\n\u003ch4\u003eAbout\u003c\/h4\u003e\n\u003cdiv class=\"teaser\"\u003e\n\u003cdiv class=\"teaser__text\"\u003e\n\u003cp\u003eDero is Phase Three’s flagship wine. Their focus for the 2021 vintage was to source the best possible fruit they could, after two years of difficulty on that front. Luckily, Ben was doing some odd jobs around Joel Mattschoss’ Wilton Hill property before harvest, and this turned into a “work for fruit” arrangement. Then, as harvest began, the good fortune continued with a call from a mate to alert Ben that there was some extra Pinot at Tony Walker’s nearby vineyard. For being just three vintages in to the Phase Three project, Ben and Sabina have managed to source some pretty incredible fruit, including their now allocated plot from Adrian Hoffmann. The resulting wine is about 90% Shiraz and the remainder Pinot Noir, with one barrique of 2020 Dero added to the blend for good measure. As for the name, Dero, it refers to a social derelict, a “nobody,” which is how Ben and Sabina felt trying to start up a winemaking operation in the Barossa with no family history and no connections. They may be the new kids on the block, but they’ve quickly found their footing.\u003c\/p\u003e\n\u003cp\u003eThe fruit was all handpicked in 400 to 1500kg parcels ranging from 11.5-15 beaumé. The largest parcel broken down to three separate ferments, with most going through long, slow whole-cluster carbonic fermentations in stainless steel. A small parcel was open fermented semi-carbonically with an open top. The wine was then transferred to French oak barriques to rest in their cool cellar for around 17 months and blended towards the end of winter 2022 with one barrel of 2020 Dero.
