The dry weather lasted throughout August and September. In spite of this, the spring rains allowed the calcareous-clayey soils to release water reserves to the plant to avoid debilitating stress, resulting in concentrated grapes with high quality potential.\u003c\/div\u003e\n\u003cdiv style=\"text-align: left;\"\u003e\n\u003cbr\u003e\u003cstrong\u003eVinification and ageing\u003c\/strong\u003e\u003cbr\u003eThe grapes were harvested by hand into 15 kg crates. After destemming and gentle crushing, the grapes were transferred to concrete tanks by gravity, without any pumping. Each individual parcel of the vineyard was vinified separately. Fermentation took place spontaneously with indigenous yeasts at temperatures of around 25 - 28°C, with pumping over two or three times a day and délestages where necessary. The total time spent in the tanks ranged from 21 to 28 days. Malolactic fermentation took place in barriques, with 100% new oak, keeping the various batches separate for the first 12 months of ageing. Subsequently, the wines were blended and returned to barriques for another year, totalling 24 months. Malolactic fermentation occurred in stainless steel in the following spring. 28 months of aging in large Slavonian casks of 25 and 50 hectolitres. This vineyard is almost 3 hectares and faces directly south. It is located closest to the Tanaro River valley and feels the impact of the warm air currents from the river; it’s the first to ripen and to be harvested. The soils of Sori San Lorenzo are also very special because of the clay and high concentration of limestone. Some of the oldest vines of Gaja are planted in this vineyard. The wines from the Sori San Lorenzo vineyard are austere in their youth, and the biggest in terms of the structure - tannic and concentrated – in comparison to the other three single-vineyard Barbaresco's Gaja makes. Sori San Lorenzo wines require a longer period of ageing than the other vineyards to be ready to enjoy.
