Located in the Galicia region of north-western Spain, the DO was formally established in 1988. Albariño has always been the flagship of this coastal region.\u003c\/p\u003e\u003cp\u003eLocated in the southern end of the Val do Salnes sub-region in the town of Sanxenxo, the winery has been in operation since 1993 and Eidos became a reality in 2000. The ‘Eidos’ (garden arbors), 100 acres of which Adega Eidos owns, are traditionally trained, are almost always ungrafted, and are over 50 years of age.\u003c\/p\u003e\u003cp\u003eSince 2003, winemaking has taken place in a modern design facility overlooking Sanxenxo harbour. Selected bunches are brought the short distance in small crates, sorted before the de-stemming, crushing and cold maceration processes. Natural yeasts undergo temperature control to achieve long fermentation and natural clarification.
